Pan-fried sea bass fillet recipe

Pan-fried sea bass fillet, fennel & chilli, lime and dill dressing

Ingredients for 4

§  Sea bass fillet x4

§  Vegetable oil 

§  Butter

For vegetable salad:

§  1/2 fennel bulb 

§  ½ red onion 

§  1 chilli pepper

§  2 radishes 

§  1 carrot 

§  1 tsp chopped coriander 

§  1 tsp chopped flat parsley

For dressing

§  2 tsp olive oil 

§  5 tsp white wine vinegar (good quality) 

§  ½ tsp Dijon mustard 

§  ½ local honey 

§  1tsp lemon juice

§  2tsp lime 

§  1 tsp chopped dill 

§  Salt & pepper


Dressing – Chop finely dill, zest lime, squeeze juice out of lime and lemon. Put all ingredients in to the food processor, and blend to make dressing.

Vegetables - Peel and slice all vegetables very finely, chop coriander & flat parsley, mix all together, season with salt and cracked pepper

Seabass fillets season with salt, pre heat pan with oil, fry fish on skin side for about 2-3min on medium heat, turn and add butter to the pan and fry only for about 20-30sec, put fish on the top of salad tossed with dressing, enjoy with a glass of wine!!!
